Always
I've never paid for service on a motorcycle, except for mounting tires. And, since my last negative experience with paying someone to do that, I may start doing that myself, too. For me, maintenance of the bike is definitely part of the fun of the sport.
However, I should also add that I've been very fortunate in not needing much in the way of repairs, either. So far (about 100,000 km of riding) the only things I've had to do beyond routine maintenance are replace steering head bearings, replace brake caliper seals, and replace a brake master cylinder, which are all quite simple jobs. I've never owned a new bike, but the ones I've bought have all been in excellent condition and have required few repairs.
